The
pizza sauce and pasta sauce at Cannon Beach Fultano's Pizza
was developed slowly after owner David Johnson took over in
2003. With the help of one member of a famous family known for
seminal Italian eateries in Portland such as Ernesto's and Nonna
Emelia's, Johnson created a recipe exclusive to this Fultano's
Pizza, which includes more ingredients than its simple yet bold
taste would indicate. It's one of those many wonders of the
Oregon Coast that hide in beautiful little corners - that only
a bit of digging around can make obvious.
Johnson
uses the best tomatoes on the market, angus beef and is extremely
fussy and exact about the kind of Italian sausage used. In fact,
it's many of these ingredients which make up the famous pasta
sauce, (along with onions, celery and peppers). It's Sicilian-style,
Johnson maintains, with a decent smattering of basil and fennel.
